1.1. More than one quarter of all the cheese in America comes from a single state: Wisconsin. The state is known as America’s Dairyland; its people proudly call Cheeseheads.
1.2. Wisconsin is also known for its winters. The capital, Milwaukee, gets nearly 130 cm of snow a year, so it’s important the roads clear of ice. Unfortunately, it’s very expensive. Looking for a way to save money, the state has found an answer in cheese – or to be more exact – the salt water that is left over from the cheese-making process.
1.3. Cheese producers are happy to give away the salt water, while cities are saving thousands of dollars a year using less rock salt.
1.4. Many cities use salt to melt snow and ice on roads, but it is not always effective. If you put dry salt on roads, you normally lose 30% of it. In Wisconsin cheese water with conventional salt by road crews to help the salt stick to the road.
1.5. For more than a decade Milwaukee has been testing different substances, but there have been problems. It seems that cheese salt water is best.
