A few minutes after 9 a.m. at Sotheby’s, a group of people huddled around a dirt-smudged truffle sitting on a white stand. Federico Balestra, the manager of Sabatino Truffles, put on his white gloves and, for of damaging the fungus, carefully rotated it ‘to show its good side’ to the photographers. It was the auction house’s first experience with selling a truffle.

Usually, Balestra would deal directly with top chefs, but this was ordinary truffle. At nearly twice the weight of the previous record holder, it was the largest specimen ever unearthed.

Balestra was unwilling to disclose where the truffle had been found, but assured everyone that the dog that sniffed the fungus out was still being fed steak as a reward.

Rather than pay a hefty tax to the government, the Balestra family had decided to sell it at auction and donate the proceeds charity.
